Description\nSCOPE

The overall scope of the job includes serving food and beverages to guests in the assigned place of work, providing a courteous, professional, efficient and flexible service consistent with the standards of the hotel and Kempinski in order to encourage sales and maximize guest satisfaction.

OVERALL OBJECTIVES

The job of Sommelier is executed satisfactorily when:\nAll rules & regulations are strictly adhered within the hotel including hotel’s policy on fire and safety as well as hygiene regulations including HACCP.\nThe sales are driven to the outlet’s full potential and that budget is adhered to.\nA High quality of product and service is never compromised in the outlet.\nThe outlet is developed in an entrepreneurial manner, looking for opportunities to generate more business at all times.\nInnovation and new ideas are fostered, collected and communicated to the Head of Department.\n

Key Responsibilities\nResponsible to Restaurant Manager.\nA courteous, professional and efficient service is provided at all times.\nBe knowledgeable of all services and products offered by the hotel.\nHave a thorough knowledge and understanding of all food and beverage items offered by the department assigned.\nHave the knowledge and understanding to explain and perform upselling all items offered by the department assigned as well as offering alternatives.\nMonitor operating supplies, equipment and reduce spoilage and wastage successfully.\nEnsure that the place of work and surrounding area is kept clean and organized at all times.\nSuccessfully perform opening and closing procedures established for the assigned outlet\nHandle guest enquiries in a courteous and efficient manner and report guest complaints and feedback to supervisors.\nUndertake reasonable tasks and secondary duties as assigned by the Department Head.\nAssist in carrying out scheduled inventories of products and operating equipment.\nHave an excellent understanding of food in general, ingredients and preparations to ensure the right wine can be recommended.\nHave an excellent understanding of today’s wine trends, ratings as well as understands the business and regularly develops further to gain greater knowledge.\nHave an excellent understanding of wines, the wine service and is able to hold trainings to the team to encourage sales.\nBe able to control stocks, produce efficient costing of wines as well as perform excellent recommendations to guests.\nBe fully knowledgeable about grapes and grape varieties.\nHave accomplished external wine trainings through organizations and suppliers.\n


Skills, Knowledge and Expertise\nTurkish nationality is must.\nEducation in hospitality management or wine related field.\nCertified with at least WSET level 2 or equivalent.\nMinimum 5 years in F&B service role.\nExcellent oral and written skills both in Turkish and English.\nAdditional language – beneficial.\nExcellent knowledge of wine, wine market, global trends, wine & food pairing and wine production. \nAbility to work independently, thrive under pressure in challenging circumstances and come up with proactive, rational solutions.\nAbility to establish and retain effective working relationships with hotel staff and clients/vendors.\nAbility to identify and delegate tasks effectively.\nExcellent organizational and time management skills.\nTo fill this position the candidate must identify with the Kempinski core values, in addition they should be especially:
