DescriptionThe incumbent in this position is responsible to coordinate and ensure that hygiene and food safety guidelines are being followed throughout the hotel as per the Dubai Municipality. The implementation and maintenance of the HACCP System, all regulations, practices, rules as stipulated by Dubai Municipality are being followed. To develop and administer programs to ensure employee safety and property compliance with safety, health and environmental regulations for specified facilities, operations and the visiting public according to Dubai Municipality standards.
Main Responsibilities1. Hotel:\nPromote a Fun, Professional and Disciplined work environment.\nResponsible for HACCP/Pre-requisite Program implementation through monitoring, coordination, assessment, verification and follow-up. \nMonitor, evaluate and review existing, new and upcoming Health and Safety legislation and ensure that the College has systems and procedures in place to meet legal compliance.\nAssists the Commercial, Engineering, Stewarding and Operations Department in their dealings with Clients in all issues concerned with Health and Safety at work. \nPerform internal audits and reports and follow-up to ensure compliance for all F&B areas including the staff canteen.\nObserves work in progress, ensures that proper safety equipment is worn and procedures are followed.\nDaily monitoring and Conducts safety audits both internal and external of HACCP procedures and guidelines\nPrepare and conduct Health & Safety training sessions/Trainings for employees including on job demonstrations or hands-on instruction.\nBe a member of the hotel’s Health and Safety Committee and actively promote a safe environment throughout the hotel.\nUndertake the planning and implementation of fire drills and other evacuation procedures, e.g. in the case of a bomb threat and as part of the College’s Emergency Plan and Business Continuity teams\nCoordinate with local authorities to comply with laws and regulations\nCoordinate microbiological samplings and pest control activities.\nConduct Training of Basic Food Hygiene, awareness course and other related programs per Municipality regulations and ensure certificates are certified by the Municipality. \nPerform hazard analysis & continual improvement in food safety.\nCreate, maintain and verify records of all HACCP and Health and Safety Reports documentation.\nDevelops policies, plans and procedures to minimize risk to the public and employees.\nMakes recommendations to management for any areas of improvement to increase Food Safety.\n\n
2. Staff Housing:\nKeeps updated with the latest industry trends as well as UAE and Dubai Housing Regulations and new products in the market.\nPerform internal audits and reports and follow-up to ensure compliance\nUndertake and attend fire drills and housing sight inspections.\n\n

Skills, Knowledge and ExpertiseThe job of Health, Safety and Environment Manager is executed satisfactorily when: \nIs responsible that the highest level of sanitation are achieved, maintained and strictly controls the documents required for government body certification across all outlets and kitchen areas.\nThe hotel is compliant at all times with all UAE health & safety requirements.\nThe hotel passes all inspections by local authorities as well cooperate peer reviews.\n Establishes internal hygiene audits in conjunction with the Executive Chef and ensures cleaning schedules are followed in all areas both FOH and BOH to guarantee optimal cleanliness.
